Masala Omelette or Indian Omelette, precisely, South Indian Omelette, is a spicy dish made by beating eggs with different ingredients of ones choice (Eg. chopped – onion, tomato, green chilly etc), which is pan-fried either flat or folded/rolled.

Method
- Beat eggs with chopped onion, tomato , green chilly and salt.
- Pour one laddle of whipped eggs into a non stick pan lined with oil.
- Spread the egg with a stapula, fold the omelette and cook for a minute by turning / rolling
- Remove to serving plate garnished with lettuce & grilled tomato while the omelette is still yellow.
