Ingredients for 1700 gms dough
- Mix all the ingredients in the dough mixer except the olive oil
- Knead the dough for 5 minutes on slow speed or until the gluten has formed.
- Add the Olive oil and knead again till a smooth dough is obtained
- Keep the dough for proofing, knock back and rest again
- Roll out the dough to 1 cm thickness and keep for proofing
- Meanwhile roast the vegetables with herbs
- Apply pesto on the bread and spread the roasted vegetables.
- Dip your fingers into olive oil and dig holes into the dough. Sprinkle with herbs and sea salt
- Bake at 200º C for 15-20 min.
