Preparation
The potatoes
Apply butter, season with salt and cracked black pepper, wrap in
Aluminum foil and bake in the oven at 160* c till cooked.
The vegetables.
Peel and trim baby carrots, clean and score bokchoy at the base, remove
Stalks from mushrooms. Cut broccoli into florets.
The fish
Marinate with salt, white pepper powder, lemon juice, English mustard
And chopped dill.
Method
- Blanch carrots, broccoli, and bokchoy in water. Toss in butter with mushrooms and cherry tomatoes, season, sprinkle chopped parsley
- Score and open the baked potato for plating.
- Put the fish on the hot plate and cook on both sides till done.
- To make the sauce, saute garlic in butter, add in English mustard, cream, and. season with salt and white pepper powder and finish with chilled butter.
Plate :Garnish with fried dill and top the potato with sour cream.
