Method

  • Marinate the cottage cheese in salt pepper oilive oil, shredded basil and coat with breadcrumbs
  • Panfry the cottage cheese in butter and drain on absorbent paper
  • Meanwhile toss the salad of rocket lettuce with cherry tomatoes blanched tomato dices and balsamic vinaigrette
  • Gratinate a slice of goat cheese under a salamander and assemble on a plate with panfried
