Method
- Marinate the cottage cheese in salt pepper oilive oil, shredded basil and coat with breadcrumbs
- Panfry the cottage cheese in butter and drain on absorbent paper
- Meanwhile toss the salad of rocket lettuce with cherry tomatoes blanched tomato dices and balsamic vinaigrette
- Gratinate a slice of goat cheese under a salamander and assemble on a plate with panfried
cottage cheese, rocket leaves salad, toasted pinenuts and balsamic reduction
