Method:

  • Roast the peppers and peel off the skin and de-seed them properly.
  • Make a fine puree of red peppers and strain it through a fine strainer.
  • Add some white wine vinegar and reduce the sauce to a thick consistency.
  • Season the sauce and finish it with butter.
