Airline chicken breasts – skin on 4
Caramelized garlic (recipe follows) – 4 tsp.
Fresh sage leaves – chopped 1 tsp.
Kosher salt – to taste
Freshly ground pepper – to taste
Olive oil – 2 tsp.
- Pry chicken skin away from flesh, making sure it stays attached around the edges. Spread with 1 tsp. caramelized garlic and 1/4 tsp. sage. Season with salt and pepper.
- Per order: Add 1/2 tsp. olive oil to preheated pan. Sear chicken, skin-side down until it begins to brown, about 4 minutes. Turn chicken over and transfer pan to 375F oven for 15-20 minutes. Allow to rest 4-5 minutes before serving.
In boiling water, blanch 8 cloves peeled, sliced garlic. In saucepan, heat 1/2 cup sugar until golden. Remove from heat, add the garlic and 1 Tbsp. unsalted butter. Mix well. Makes about 1/2 cup.
