Method:
- Marinate the lamb chops with salt pepper, roasted cumin, thyme oil and grill on the griller
- Put the lamb in the oven at 200 deg c and cook until medium
- Blanch & butter glaze the vegetables, season them and keep aside
- Cut the potatoes into dices, boil & straint, toss it with bacon until golden brown
- Prepare lamb stock, reduce and flavour with red currants
- In a plate, assemble grilled lamb chops with bacon potatoes, sauteed vegetables and red currant sauce
- Garnish with rosemary sprig
