Method:
- Pound garlic with anchovies, salt and pepper
- Mix dijon mustard with the anchovy paste, lemon juice and egg yolks
- Blend olive oil in a thin stream whisking all the time until a thick emulsion is formed
- Add chopped shallots and chives
