Method:

  • Pound garlic with anchovies, salt and pepper
  • Mix dijon mustard with the anchovy paste, lemon juice and egg yolks
  • Blend olive oil in a thin stream whisking all the time until a thick emulsion is formed
  • Add chopped shallots and chives
