Veal Meatballs – Standard Recipe

Yield: 36 appetizer-size meatballs

Ground veal – 2 1/2 lb.
Prepared bread crumbs – 3/4 cup
White wine – 1/4 cup
Eggs – 2
Fresh chives – minced 1 1/2 Tbsp.
Fresh parsley – chopped 1 1/2 Tbsp.
Fresh chervil – chopped 1 1/2 Tbsp.
Fresh tarragon – chopped 1 1/2 Tbsp.
Fresh shallots – chopped 1 Tbsp.
Red pepper flakes – 1 Tbsp.
Salt and pepper- to taste

Preparation:-
Combine all ingredients in large mixing bowl. Roll into walnut-sized balls, about 1-oz. each. Place in greased roasting pan and cook in 350F oven until golden, about 5 to 8 minutes.
