Yield: 2 cups
Vegetable oil 1/4 cup
Onion, chopped 1 cup
Garlic, minced 2 to 3 tsp.
Flour 1 Tbsp.
Chicken stock 1 1/2 cups
New Mexico green chile, roasted, peeled, chopped 2/3 cup
Salt to taste
Method:
- Heat oil in medium pan and saute onion until soft, 2 to 4 minutes. Add garlic; saute 2 minutes. Sift in flour.
- Slowly stir in chicken stock; add green chile. Bring mixture to boil, reduce heat, simmer 15 minutes. Season with salt.
