All-purpose flour – 1 cup
Sugar – 1/2 cup
Salt – 1/8 tsp.
Eggs – 4
Milk – 1 cup
Heavy cream – 1 cup
Pure vanilla extract – 1 Tbsp.
Nonstick – cooking spray
Sweet black cherries – pitted, well drained 3 cups
Confectioners’ sugar – 2 Tbsp.
- In blender combine flour, sugar, salt, eggs, milk, cream and vanilla. Blend thoroughly.
- Spray bottom of 9-in. glass or ceramic baking dish with nonstick cooking spray. Spread cherries evenly on bottom of baking dish. Pour batter slowly over fruit.
- Place dish on center oven rack; bake 50 minutes at 350F until puffy and golden. Remove from oven, dust with confectioners’ sugar.
- Cool before serving. Serve cold or at room temperature.
