Ingredients for 800 gms dough
- Mix all the ingredients in the dough mixer except the butter
- Knead the dough for 5 minutes on slow speed or until the gluten has formed.
- Add the softened butter and knead again till a smooth dough is obtained
- Keep the dough for proofing, knockback and rest again
- Shape the rolls to form a disc of 1 cm thickness with a hole in the center
- Poach the bagels in water for 5-6 minutes and then place on a tray
- Glaze with egg wash and top it up with toppings of your choice
- Bake at 200º C for 15-20 min.
