Star anise – 3
Coriander seeds – 1 Tbsp.
Mustard seeds – 1 tsp.
Sichuan peppercorns – 1 tsp.
Jumbo shrimp – (10-12) 24
Garlic, chopped – 1 oz.
Red curry paste – 2 oz.
Indonesian chili paste – 2 Tbsp.
Honey – 1/2 cup
Vegetable oil – 1 1/2 cup
Kecap manis – 2 Tbsp.
Salt – to taste
Stir – fried greens your choice
Method:-
- Dry roast star anise, coriander, mustard seed and peppercorns in hot pan until aroma is released. Cool and grind; set aside.
- Skewer shrimp; set aside. Whisk together spices with garlic, curry paste, chili paste, kecap manis and salt; pour over shrimp. Marinate overnight.
- Grill shrimp about 3 minutes per side.
- To plate, divide greens onto 4 plates. Place 6 shrimp on top of each pile of greens.
