Greek Turkey Burger

Yield: 24 portions

Onions, finely diced- 1/2 lb.
Vegetable oil – as needed
Ground turkey – 6 lb.
Pimento-stuffed olives, chopped – 3/4 lb.
Fresh parsley, chopped – 3/8 cup
Fresh garlic, minced – 2 Tbsp.
Ground cinnamon – 1 1/2 tsp.
Ground nutmeg – 3/4 tsp.
Salt – 1 Tbsp.
Black pepper – 1 1/2 tsp.
Feta cheese – 1 1/2 cups
Sour cream – 1 1/2 cups
Pita-bread rounds – 24
Cucumber, diced – 1 1/2 lb.

Method:

  1. Saute onions in vegetable oil until caramelized; let cool.
  2. Mix turkey with onions, olives, parsley, garlic, cinnamon, nutmeg, salt and pepper. Form into 4-oz. patties; reserve.
  3. In food processor, lightly combine feta cheese and sour cream; reserve.
  4. Per order: Grill patties to internal temperature of 165F. Serve on pita, topped with about 3 Tbsp. each of feta mixture and cucumbers.
