Method
- Cream the butter and sugar until light and fluffy
- Add the yolks one at a time and keep mixing
- Fold in the sifted flour, lemon juice and zest
- Whip the egg whites into a meringue and fold in the batter
- Pour the batter into a greased tin and bake at 180 Deg C for 35-40 minutes
