Sponge Fingers – Standard Recipe

Method:

  • Separate the eggs and whisk egg yolks with half of the castor sugar
  • Whip the egg whites with remaining part of castor sugar
  • Sift flour along with cornflour
  • Fold the flour into the yolks and then carefully fold in the whipped egg whites
  • Pipe on a grease proof paper and sprinkle icing sugar over them and bake at 200 deg C for 10 minutes
