Lemon Mustard Dressing

Ingredients for 180gms

0.03	KG	Pommery mustard
0.005	KG	Salt
0.01	KG	Black pepper
0.01	KG	Lemon juice
0.005	KG	Lemon zest
0.02	KG	Chicken stock

Method:

• Take mayonnaise in a bowl add pommery mustard, lemon juice, lemon zest and mix it well.
• Add chicken stock slowly and whisk the sauce, and adjust the seasoning.
