Yield: 36 appetizer-size meatballs
Ground veal - 2 1/2 lb.
Prepared bread crumbs - 3/4 cup
White wine - 1/4 cup
Eggs - 2
Fresh chives - minced 1 1/2 Tbsp.
Fresh parsley - chopped 1 1/2 Tbsp.
Fresh chervil - chopped 1 1/2 Tbsp.
Fresh tarragon - chopped 1 1/2 Tbsp.
Fresh shallots - chopped 1 Tbsp.
Red pepper flakes - 1 Tbsp.
Salt and pepper- to taste
Combine all ingredients in large mixing bowl. Roll into walnut-sized balls, about 1-oz. each. Place in greased roasting pan and cook in 350F oven until golden, about 5 to 8 minutes.
