0.1 KG Cherry tomatoes
0.05 KG Pitted green olives
0.1 KG Napolitaine sauce (see sauces)
0.02 KG Salt
0.02 KG Black pepper
0.02 KG Rosemary
0.02 KG Onions
0.005 KG Garlic
0.03 LTR Oil

Method:

  • Clean and slice the tenderloin into 1cm thick strips.
  • Marinate the tenderloin with salt, pepper, and chopped rosemary.
  • Skewer the beef strips and grill the beef to give criss-cross grill mark.
  • Blanch and peel the cherry tomatoes and mix them with napolitaine sauce
  • Place the napolitaine sauce at the base and the tenderloin skewer.
  • Garnish it with a sprig of rosemary and some more sauce.
