0.33 LTR LUKEWARM WATER
0.026 KG FRESH YEAST
0.5 KG FLOUR
0.33 LTR WATER
0.026 KG FRESH YEAST
0.013 KG SUGAR
1 KG FLOUR
0.06 KG OIL
0.033 KG SALT
0.03 KG CAUSTIC SODA PELLETS
0.33 LTR WATER
0.01 KG SEA SALT

Method:

  1. Mix the first three ingredients well and allow to rise for 1 hour to make a starter
  2. Make a dough with water, yeast, sugar, starter and flour.
  3. When the dough is 3/4th kneaded add oil, then add the salt finally.
  4. Ferment the dough for 20 minutes. Knock back and rest
  5. Shape and keep in the freezer to harden.
  6. Boil water and add caustic soda to it. Now using tongs dip the frozen pretzels in caustic for 10 sec and arrange on a baking tray.
  7. Proof , slit with a sharp blade, Sprinkle sea salt and bake in the oven.
