Pesto Sauce - Standard Recipe

Dish name : Pesto Sauce

Pesto is an Italian sauce, traditionally consists of crushed garlic, European pine nuts, coarse salt, basil leaves and hard cheese such as Parmigiano-Reggiano or pecorino Sardo, all blended with olive oil. Pesto is mainly used in pasta. They are also used in soups, bread, salads, a main course like pesto chicken etc.

0.5 Kg Basil leaves
0.08 Kg Garlic
0.03 Kg Parsley
0.06 Kg Pinenuts
0.3 Litre Olive oil
0.01 Kg Salt
0.005 Kg Pepper
0.06 Kg Parmesan cheese

Method:

  • Blanch the herbs in hot water.
  • Put all the ingredients in a grinder and grind to a coarse paste
  • Store and use as required
