Ingredients for 10 portions

0.15 KG Red peppers
0.15 KG Yellow peppers
0.15 KG Capsicum
0.02 KG Salt
0.01 KG Pepper
0.02 KG Chopped Basil
0.03 KG Parmesan shavings
0.02 KG Chopped garlic
0.045 LTR Red wine vinegar
0.15 LTR Salad oil
0.01 KG Dijon mustard

Method:

  • Boil pasta and drain
  • Marinate the peppers in salt pepper olive oil and roast in oven
  • Make vinaigrette by combining red wine vinegar oil and dijon mustard
  • Toss all the ingredients together and serve garnished with basil and parmesan cheese
