0.25 Kg Olive oil
0.15 Kg Butter
0.3 Litre Cream
0.1 Litre Jus
0.1 Litre White wine
0.2 Kg Arugula lettuce
0.9 Kg Mash potatoes
0.05 Kg Mustard vinaigrette
0.01 Kg Salt
0.005 Kg Black pepper
0.25 Litre Pineapple juice


  • Marinate the pork medallions in olive oil, salt and pepper and pan-fry
  • In another pan saute - onion, garlic & mushrooms in butter and deglaze with white wine.
  • Add jus and cream and cook, until a creamy ragout is obtained
  • In another pan reduce the pineapple juice until a glaze is obtained.
  • Combine pineapple glaze with mustard vinaigrette and season. Toss arugula in this dressing
  • Serve pork medallions with mashed potato, ragout of mushrooms and arugula salad.
