Ingredients for 6.8 kgs

1.50 KG eggs
1.8 KG sugar
0.5 KG chocolate
1.8 KG butter
1 KG flour
0.2 KG cocoa powder

Preparation Method

  • Whisk the eggs until ribbon stage
  • Melt the butter and chocolate over a double boiler and cool
  • Fold in the sifted flour and cocoa powder
  • Fold in melted butter and chocolate mixture and pour the contents into a greased tin
  • Bake at 180 degrees Celcius for 35 mins
