Ingredients for 1 Kg

0.175 KG butter
0.175 KG brown sugar
0.250 KG Flour
0.150 KG Eggs
0.001 KG Lemon Zest
0.010 KG Lemon Juice

Method

  • Cream the butter and sugar until light and fluffy
  • Add the yolks one at a time and keep mixing
  • Fold in the sifted flour, lemon juice and zest
  • Whip the egg whites into a meringue and fold in the batter
  • Pour the batter into a greased tin and bake at 180 Deg C for 35-40 minutes
