Indonesian Shrimp with Stir-Fried Greens

Dish Name : Indonesian Shrimp with Stir-Fried Greens

Yield: 4 portions

Star anise - 3
Coriander seeds - 1 Tbsp.
Mustard seeds - 1 tsp.
Sichuan peppercorns - 1 tsp.
Jumbo shrimp - (10-12) 24
Garlic, chopped - 1 oz.
Red curry paste - 2 oz.
Indonesian chili paste - 2 Tbsp.
Honey - 1/2 cup
Vegetable oil - 1 1/2 cup
Kecap manis - 2 Tbsp.
Salt - to taste
Stir - fried greens your choice

Method:-

  1. Dry roast star anise, coriander, mustard seed and peppercorns in hot pan until aroma is released. Cool and grind; set aside.

  2. Skewer shrimp; set aside. Whisk together spices with garlic, curry paste, chili paste, kecap manis and salt; pour over shrimp. Marinate overnight.

  3. Grill shrimp about 3 minutes per side.

  4. To plate, divide greens onto 4 plates. Place 6 shrimp on top of each pile of greens.
