Ingredients for 600 ML

0.01 KG Chives
0.01 KG Terragon
0.01 KG Parsley
0.01 KG Dijon Mustard
0.01 KG Salt
0.01 KG Black pepper
0.12 KG White wine vinegar
0.36 KG Olive oil
0.03 KG Lemon juice
0.06 KG Egg yolks

Method:

  • Take egg yolks in a mixing bowl and add olive oil gradually and make an emulsion.
  • Add mustard and white wine vinegar and seasonings and mix it well.
  • Blanch and puree the herbs and add to the dressing and whisk it.
  • Taste and adjust the seasoning and add lemon juice. Serve it with salads.
