- Take egg yolks in a mixing bowl and add olive oil gradually and make an emulsion.
- Add mustard and white wine vinegar and seasonings and mix it well.
- Blanch and puree the herbs and add to the dressing and whisk it.
- Taste and adjust the seasoning and add lemon juice. Serve it with salads.
