Greek Turkey Burger

Yield: 24 portions

Onions, finely diced- 1/2 lb.
Vegetable oil - as needed
Ground turkey - 6 lb.
Pimento-stuffed olives, chopped - 3/4 lb.
Fresh parsley, chopped - 3/8 cup
Fresh garlic, minced - 2 Tbsp.
Ground cinnamon - 1 1/2 tsp.
Ground nutmeg - 3/4 tsp.
Salt - 1 Tbsp.
Black pepper - 1 1/2 tsp.
Feta cheese - 1 1/2 cups
Sour cream - 1 1/2 cups
Pita-bread rounds - 24
Cucumber, diced - 1 1/2 lb.

Method:

  1. Saute onions in vegetable oil until caramelized; let cool.

  2. Mix turkey with onions, olives, parsley, garlic, cinnamon, nutmeg, salt and pepper. Form into 4-oz. patties; reserve.

  3. In food processor, lightly combine feta cheese and sour cream; reserve.

  4. Per order: Grill patties to internal temperature of 165F. Serve on pita, topped with about 3 Tbsp. each of feta mixture and cucumbers.
