Ingredients for 10 portions

1 KG Cleaned Iceberg lettuce
0.15 KG Diced Onion
0.2 KG Diced Tomato
0.3 KG Diced Cucumber
0.1 KG Diced Capsicum
0.05 KG Kalamata Olives
0.15 KG Feta Cheese
0.07 LITER Basic Vinaigrette(see recipe)
0.01 KG Salt

Method:

  • Clean and Process all the vegetables.
  • Prepare Vinaigrette.
  • Mix all the diced vegetables and iceberg together and kalamata olives.
  • Gently toss it and add lemon vinaigrette to the salad .
  • Just before plating add cubes of feta cheese and season the salad
  • Then finally build the salad on to a salad plate.
