A roulade is a dish of filled rolled meat or pastry. Roulade can be savory or sweet. Swiss roll is an example of a sweet roulade. The term roulade originates from the French word “rouler”, meaning “to roll”. Goats’ cheese, or chèvre, is cheese made from goat’s milk.

0.2 Kg Red bell pepper
0.2 Kg Yellow bell pepper
0.1 Litre Balsamic vinegar
0.2 Kg Baby spinach
0.05 Kg Pine nuts
0.01 Kg Salt
0.01 Kg Pepper
0.3 Kg Cucumber

Method:

  • Spread/ place cucumber shavings on cling wrap & spread cream goat cheese on top.
  • Boil, deskin and mash the peppers. Season it & spread over cream goat cheese & make a roulade.
  • Allow it to cool and then cut into slices.
  • Present it over baby spinach with pine nuts dressed with balsamic vinegar.
