Ingredients for 1700 gms dough

For Bread
0.8 KGS FLOUR
0.05 KGS YEAST
0.01 KGS SUGAR
0.07 KGS OLIVE OIL
0.02 KGS SALT
0.005 KGS IMPROVER
0.4 LITRES WATER
For topping
0.1 KGS TOMATOES
0.1 KGS OLIVES
0.01 KGS HERBS
0.01 KGS PESTO
0.01 KGS SEA SALT
0.1 KGS OLIVE OIL

Method

  • Mix all the ingredients in the dough mixer except the olive oil
  • Knead the dough for 5 minutes on slow speed or until the gluten has formed.
  • Add the Olive oil and knead again till a smooth dough is obtained
  • Keep the dough for proofing, knock back and rest again
  • Roll out the dough to 1 cm thickness and keep for proofing
  • Meanwhile roast the vegetables with herbs
  • Apply pesto on the bread and spread the roasted vegetables.
  • Dip your fingers into olive oil and dig holes into the dough. Sprinkle with herbs and sea salt
  • Bake at 200º C for 15-20 min.
