Ingredients for 3800 gms batter

0.75 KG flour
0.6 KG eggs
0.2 KG cocoa
0.7 KG sugar
0.2 KG chocolate
0.02 KG baking soda
0.02 KG baking powder
0.9 LITRE milk
0.4 KG butter

Method

  • whisk the eggs and sugar till it reaches ribbon stage
  • Combine butter, chocolate and milk and melt over a double boiler
  • sift flour, cocoa powder, baking soda and baking powder and fold into the egg mixture
  • Fold in the melted butter and chocolate mix
  • spread on a lined tray and bake in the oven for 20 mins at 180 Celsius
