Dobos Sponge - Standard Recipe


Dish Name : Dobos Sponge
weight of one sponge approx 400 gms
Ingredients for 2.8Kg

Qty Unit Description
0.45 KG butter
0.6 KG egg yolk
0.8 KG egg white
0.45 KG sugar
0.5 KG maida

Method
1. Beat the eggs and the sugar together till fluffy.
2. Sift flour, and fold them into the egg mixture.
3. Add the melted butter mixing gradually.
4. Pour the mixture into greased moulds and bake at 180° C.
