Devil's Sponge - Standard Recipe

Ingredients for 2.400 Kilogram

0.250 KG Melted butter
0.400 KG eggs
0.625 LITRE milk
0.010 KG baking soda
0.012 KG baking powder
0.625 KG caster sugar
0.450 KG flour
0.125 KG cocoa powder

Method

  • Beat the eggs and the sugar together till fluffy.
  • Sift flour with cocoa powder, baking soda, baking powder and fold them into the egg mixture.
  • Add the milk and the melted butter mixing gradually.
  • Pour the mixture into greased moulds and bake at 180° C.
