Cream of asparagus - soup prepared with asparagus, stock and milk / cream as primary ingredients. Cream of asparagus soup can be served hot or cold.

0.04 Litre Onions
0.02 Kg Garlic
0.02 Kg Salt
0.01 Kg Pepper
1.8 Kg Chicken stock
0.1 Kg Butter
0.35 Litre Cream
0.02 Kg Parlsey

Method:

  • Saute onion and garlic in butter until golden brown.
  • Add chopped asparagus, parsley and cook till soft. Blend the mixture and pass through a sieve.
  • Add chicken stock and bring to boil. Add seasoning.
  • Adjust consistency with cream and butter.
  • Garnish with asparagus sprig.
