Cucumber mint gazpacho is blended into a silky creamy soup with greek yogurt, mint and then it’s chilled.
Ingredients for 10 portions
- Wash and peel cucumber.
- Remove the core that is the seeds and then puree it along with mint leaves
- Add salt and pepper to the same
- Then add vegetable stock|
- Finally adjust the consistency by adding double cream
- Chill it and then serve.
