Chilled Cucumber Soup - Cucumber Mint Gazpacho

Cucumber mint gazpacho is blended into a silky creamy soup with greek yogurt, mint and then it’s chilled.

Ingredients for 10 portions

Qty Unit Description
1 Kg Cucumber
0.03 Kg Salt
0.01 Kg Pepper
0.02 Kg Mint leaves
1.2 Litres Vegetable stock
0.1 Kg Greek yogurt
0.2 Litres Double cream

Method:

  • Wash and peel cucumber.
  • Remove the core that is the seeds and then puree it along with mint leaves
  • Add salt and pepper to the same
  • Then add vegetable stock|
  • Finally adjust the consistency by adding double cream
  • Chill it and then serve.
