Chafing dish temperatures on buffet

Dear All,

I would be really grateful if one of you could share the temperature you use on your chafing dish on your buffet.
I know it varies depending on the food but i feel that in our property we are too cold (we use 40 degrees Celsius for hot station on buffet)

It must be 65 C according to HACCP.


Hot foods should be held at 140 °F or warmer. On the buffet table you can keep hot foods hot with chafing dishes, slow cookers, and warming trays. Cold foods should be held at 40 °F or colder. Keep foods cold by nesting dishes in bowls of ice. Otherwise, use small serving trays and replace them.

Hot holding temperature - above 63 degree Celsius
Cold food should be kept on 5 degree Celsius
