1.5 kg Beef fillet
0.05 kg Leeks
0.1 kg Celery
0.1 kg Carrots
0.15 kg Onions
1 ltr Stock
0.05 kg Butter
0.6 ltr Red wine
0.02 kg Salt
0.01 kg Pepper
0.02 ltr Refined Oil


  • Marinate the beef with oil, salt and crushed pepper.
  • Tie the meat with the string so as to retain the shape.
  • Sear the meat on the hot plate.
  • Saute mirepoix in butter and put the seared meat in it.
  • Cover the pan and cook in the oven for 45 min at 200 degree Celsius.
  • Remove the meat and strain the sauce in another pan.
  • Reduce the sauce, season it and pour it over the braised beef and serve.
