All-purpose flour - 1 cup
Sugar - 1/2 cup
Salt - 1/8 tsp.
Eggs - 4
Milk - 1 cup
Heavy cream - 1 cup
Pure vanilla extract - 1 Tbsp.
Nonstick - cooking spray
Sweet black cherries - pitted, well drained 3 cups
Confectioners’ sugar - 2 Tbsp.
In blender combine flour, sugar, salt, eggs, milk, cream and vanilla. Blend thoroughly.
Spray bottom of 9-in. glass or ceramic baking dish with nonstick cooking spray. Spread cherries evenly on bottom of baking dish. Pour batter slowly over fruit.
Place dish on center oven rack; bake 50 minutes at 350F until puffy and golden. Remove from oven, dust with confectioners’ sugar.
Cool before serving. Serve cold or at room temperature.
