Ingredients for 250 ml

0.05 Lt White wine vinegar
0.05 Lt Dry white wine
0.03 KG Chopped shallots
0.25 KG Cold butter cubes

Method:

  • In a pan take the white wine vinegar, white wine and chopped shallots.
  • Put it on the flame and heat to reduce the wine to a syrupy consistency.
  • Add the cold butter cubes and swirl them around to form a smooth emulsion.
